I have some Jerusalem artichokes growing on my plot and would like to harvest most of them to make soup this weekend. I'd like to replant some of the tubers in Feb for a harvest this time next year and give some tubers to some friends. Any advice on the best way to store tubers for 2-3 weeks? Would it be best just to replant straightaway rather than waiting for Feb to arrive? Should I consider storing them in sand for such a short time? Anyone stored them in the fridge successfully (i.e. without them shrivelling up) for that amount of time?

I have found that they store quite happily for several weeks simply dug up and left in a cold shed or garage. You will probably find that you have quite a few grow from the ones inevitably missed during harvest.
i started with a few about 4 years ago, first year i dug them all up and we ate them, the ones id missed grew the second year, i haven't "planted " any since, they are now a 6 foot diameter clump, i just dig what we want from round the outside to try to stop them spreading.
I agree with Richard, in fact, they are almost impossible to get rid off once you have planted them. So I would suggest that you just harvest those you want and the 'leftovers' will shoot up on their own in spring.
If you do want to store them, yes, a cool but frost free shed or garage will do nicely for them. They do go soft eventually, but not in that short time.

Thank you! I seem to think that I have been very careful to dig them all out and that there are none left behind to regrow, but I have thought the same thing when digging up my spuds. There are always a few volunteers around to pull up.
