Aubergine and Pepper Caviar

675g aubergines, halved lengthways.
2 green peppers, de-seeded and quartered.
3 tblsp olive oil.
2 firm, ripe tomatoes, de-seeded and finely chopped.
3 tblsp fresh parsley, chopped.
2 cloves of garlic, crushed.
2 tblsp red wine vinegar.
Lemon juice.
Seasoning.

Char grill or bake the aubergines 'til soft.
Remove the skins.
Place the aubergines in a food processor and - whilst the motor is running - add the olive oil in a continuous stream.
Remove the blade and carefully stir in the tomatoes, parsley and garlic. Add lemon juice and seasoning to taste.
