I'm not a huge fan of chutney but am making an awful lot this year as there's so much fruit. This one I made last night and it's the first one that tastes fantastic straight out of the pan, even though it's supposed to mature for three months like the others.

1½ lb plums (I used yellow ones)
8 oz green or red tomatoes
8 oz onions
1½ lb cooking apples
1½ lb Demerara sugar
1 lb raisins
1½ tbsp salt
¼ tsp chilli powder
1 pint vinegar


Method

Stone plums and cut into quarters.

Rough chop tomatoes, onions and apples (cored but not peeled) and fine chop in a blender.

Put all ingredients into a large pan. Bring slowly to the boil and simmer slowly for about 1½ hours until thick.

Pot and cover.

Just wondered Chantal, do you put the lil wax discs on top of your chutters or not? :roll:

Tigger has just pointed out to me that there was no vinegar in the recipe. Yes there is and I've amended it it so apologies to anyone who's already made some (no-one I hope).
