What is the best way to store or keep peppers and chilli's ?
I have a good crop of both this year.

They dry quite well, threaded on sewing thread and hung in the airing cupboard.
Also freeze well, but I'd advise "processing" to save space. Clean, deseed to hotness desired and cut into flat slices as opposed to rings.
Do not put off thanking people when they have helped you, as they may not be there to thank later.

I freeze peppers ready chopped in amounts I can use in one go.

Hi Bren. Chillies can also be preserved in vodka or sherry, to spice up a casserole very nicely. :D
Chilli sauce or jam is nice too.

Jalapenos, when preserved by smoking, become chipotles, a very nice ingredient. Apparently you can smoke them in about 5 hours in a kettle barbecue ...

For chillies, freezing works well and I find it much easier to freeze the whole fruit. They're much easier to then chop straight from the freezer (much less chance of getting toxic juice on your fingers than when fresh).
