Hi Tigger :D

Back in August/September you posted a recipe for bread & butter pickle for those of us who had a glut of cucumbers :o as I had loads of them I thought I would give it a try :P which I did and then completely forgot about It :oops: (as you have to wait 3 months before eating it)
Today we were looking for the last of the Christmas decorations and found the Bread & Butter Pickle which was supposed to opened around November time, an extra couple weeks didn't harm it :P
I have never tasted anything quite like it, It is gorgeous :D :D :D it so good that I have been instructed to plant more cucumbers for next year as the couple of jars that I have will not last long :( So Tigger thank you very much for the recipe its brilliant :D :D

Can I second that I made loads had a glut :) but the children are fighting over it my son in law who hates gherkins adores it so instead of feeding surplus to the chickens I will be making more :) I grow the mini ones and it works really well and as I was picking 10 per day I had plenty to use

Bread and Butter Pickle
This is one of those recipes that looks inadequate. Don't think that it is. It will surprise you.

3 large cucumbers.
3 tblsps salt.
4 onions - sliced.
1 pint white vinegar.
6 ozs sugar.
1 tsp celery seed.
2 tsp mustard seed.

Place the sliced cuccumbers, salt and sliced onions in a bowl. Stand for an hour. Pour off the brine and rinse well. Drain. Heat the vinegar, sugar, celery and mustard seed. Dissolve the sugar. Boil for 3 minutes.
Pack the vegetables into the jars and seal with the hot vinegar.

Store for 3 months before opening.

I will definitely try it now that people are recommending it. I had too many cues in the summer and ran out of ways to use them.

I'll make a note of this recipe Tigger as I often have surplus crops from my mini cucumbers and prefer recipes which have been tried and tested rather than simply taking them from a recipe book.
Do anybody think it would work as well with small courgettes? We always seem to end up with more than we can cope with at the height of summer.

I do not think it will work with courgettes ! you fould slice them and steam them before freezing so they are ready to add to dishes though, I think that would work, I make loads of ratatouille with surplus toms too to use in winter and pot into plastic takeaway cartons just enough for the 2 of us

I've just given a few jars of this together with some others and home made chocs and jams for Chtristmas pressies.

It;s such a simple pickle that tastes so good!
