Tie a few knobs of char-coal in some netting with a stone to weight it down and place in the butt.

Will the coal bricks I burn on the fire do the same job? or does it have to be charcoal?

I use left over vinegar (from pickled onions ) ... about 10ccs..

Don't know about coal bricks. I've not tried it.
