Hi

I have just been given 2 huge bunches of corriander - more than I can sensibly use before it goes off - anyone got any ideas of what I can do to preserve some for later use in the long cold winter ahead??

My kitchen smells wonderful by the way..

Firstly, I assume this is garden grown rather than shop bought bunches. If so, you need to thinit down to the useful leaves, rather than keeping the many large stalks it may possibly contain.

Some people then suggest chopping it up, putting into ice-cube trays & freezing with a little water.

I've never tried this and guess that it might just work for coriander that you'd add in the last 5 minutes of a cooked dish before serving (but hopeless for a salad!).

It might also freeze ok in its existing bunches. Once frozen, you could probably break off just the amount you needed & use as above. Failing that, make a large pot of salsa with it and have a Mexican party :)

Liquidise it with a green chilli, a splash of lemon juice and enough water to get it to a paste and then freeze in an ice cube tray. Defrost cubes and stir into plain yoghurt for a lovely relish for curries.

Thank you -I will give both of those suggestions a try. I thought perhaps a pesto with corriander maybe almonds instead of pine nuts. I have enough to experiment with.
