Hi all

Does anyone have a receipe for the above yummy stuff please. Seen a load of nice hips just ripe for the picking

There's loads if you Google for it. Try this one

Rose Hip Jelly
8 cups of rose hips
6 cups of water
1 bottle of certo
1/2 cup lemon juice
5 cups of sugar

Boil the rose hips for 10 - 15 min. until soft enough to crush. Crush them and squeeze through cloth, to make juice. For every 4 cups of juice add one bottle of certo and bring to a boil. Add the 1/2 cup of lemon juice and 5 cups of sugar (1/2 tsp. of butter to prevent foam). Bring to a boil and boil hard for 2 min. Remove from heat and pour into sterilized jars and seal. The jelly has a wonderful flavor and is the consistency of liquid honey.

Hi Chantal
I'd like to have a go at this. I have lots of rose hips growing wild in the garden. Just 2 questions -
1. Can you use any rosehips?
2. What on earth is Certo?

I've no idea about the rose hips although Google may be able to help if you give it a go. I've never tried this but I would think any big fat ones would do.

Certo is liquid pectin which can be found in bottles at Tesco's and Sainsbury's beside the jam sugar. :D

Thanks Chantal, I will try Morrisons later. I might as well try with the rosehips I've got in the garden. Nothing to lose except perhaps a case of horrible poisoning leading to a very painful and lingering death! :shock:
