Is there any health reason why I shouldn't eat the black seeds which are now maturing on my sunflower heads, or should I save them for the birds?

Hi there Primrose,
I think that you have to shell them, and eat the seed inside. I'm not sure, but I think that's how its done!! Someone else may know otherwise?? :?
