Parsnip beauty?

Why do we not grow parsnips as a flower plant?

I am extremely taken by these spectaular plants this year, the shading of green to green-with-a-hint-of-yello on the stem, the cut glossy leaves, the yellow flowers.

I think if you gave a young maiden a bunch of those, they wouldn't be best pleased, they just don't seem to have the same taste as men.

There was a letter in KG a couple of years ago from someone who had cleared a disused plot with a load of parsnips which looked like yours. He cut the lot back and then spent the next few days at the hospital/doctor with what looked like acid burns to his arms. He said the scars too over a year to fade (and he'd sent photos). It was horrible so be really careful.

This could be why we don't grow them as flowers...
