3 large aubergines.
1 large onion, chopped.
2 garlic cloves, crushed.
Juice of a lemon.
6 tblsp olive oil.
Seasoning.
4 tomatoes, diced.
Finely chopped parsley to garnish.
Char frill or bake the aubergines 'til soft.
Remove the skins and place the flesh into a food processor.
Add the onion, garlic, seasoning and lemon juice, then process until smooth.
Pour in the olive oil whilst the motor is running.
Remove the blade and stir in the chopped tomato.
