Kitchen dead period

I've just received all my seed for the coming season but I'm still trying to come up with something different for the kitchen during the winter early spring period. I've got all the staple brassicas and roots sorted but would welcome other suggestions perhaps for some of the less familiar.

What about veg that store indoors during the Winter, such as Winter Squash?

The other useful occasional thing is indoor sprouting seeds, especially if you can buy them in bulk, because they will grow to maturity in 5 or 6 days and are useful for salads and sandwiches when other winter salad stuff may be in a little short supply.
