Glutney Chutney!

Started this chutney early today, from H F-Whittingstall's River Cottage Year, its a great recipe, excellent for using up gluts of courgettes, toms, apples and plums. Will post info if anyone wants.

Yes please Victoria, save me hunting for it ! I still have more surplus to use up. I just made some honey and mustard pickle and posted the recipe.

HFW's Glutney chutney!

1k overgrown courgettes/marrows OR 1k pumpkin (courgettes don't need to be peeled but obv pumpkin will)
1k red/green tomatoes OR 1k of plums
1k cooking/eating apples
500g onion
500g sultanas or raisins
500g light brown sugar
750ml white wine or cider vinegar made up to 1 litre with water
1-3 teaspoons chilli flakes - depending on your taste
1 teaspoon salt

Spice bag - thumb sized chunk of ginger - chopped, dozen cloves, dozen black peppercorns, generous teaspoon coriander seeds plus few blades of mace.

All in a pan together, bring to boil slowly, then simmer etc etc. Enjoy!!
