courgette suggestions

For anyone who is struggling as to what to do with the excess of courgettes. A good friend bought be a book called "What will I do with all those courgettes, by Elaine Bourish. ISBN 0952488159 It is full of 150 recipes for soups, salads, main courses, casseroles bread and cake, I have only just started using it but it seems quite good.

I have got three superb recipes I use courgettes for so if anyone wants a good recipe please pm me and I will email them to you. (also including aubergines)

My courgette suggestion is "Grow less in future" - a piece of advice I always ignore :roll: :roll:

However we have plenty of good recipes, including raw, thinly sliced and dressed with olive oil, sherry vinegar, lemon juice and mint or basil.

Also the hens are very partial to the ones that get a bit big.

I know what you mean Alan. I always worry that they might not grow so I plant a couple of extra ones and they all come up, I can't throw them away so I plant them all. This is why I need a book like this.

I don't like them all that much but my wife does and she likes to have a choice so we have 10 plants, 7 varieties. The leaves are huge this year, not sure what that says about yield, they are just starting so I think I'll be looking for a market stall pitch! There are 4 Pumpkins, 10 Squashes and a row of Gourds for drying in the same bed - we call it the Triffid bed.

Just remembered we went to Harlow Carr yesterday and in their book shop there was a book by the same author with suggestions on what to do with root vegetables but my OH would not let me buy it. :? too many recipe books already. :lol:

the courgette soup recipes I posted last year will be in the recipies section and I have just posted the method for freezing them under a new topic from primrose who was wondering what to do with her surplus kale and chard.

Thanks Sally. I'm managing to reduce the courgette mountain a little by picking them when they're only three or four inches long but next year I WILL DEFINITELY ONLY HAVE TWO PLANTS.

Lady's, i'll believe that when i read it next year.

First there will only be six seeds in the packet, then they will all germinate well, and then you will not have the heart to throw them away so they will all get planted. :) :wink:
