What other vegetables are there that have proven health benefits for specific conditions, apart from providing the normal vitamins & mineral elements for well being?

Hi Primrose, I like tender beetroot grated raw with a sweet sour based dressing and a few raisins or sultanas added, wonder if raw works better than cooked...

Nature's Babe - that sounds rather interesting and different. I'll give it a try as I still have a bucket of them in compost to use up and was running out of interesting ideas for them.

Primrose you can put cooked beetroot in the blender and add it to a recipe like you would applesauce, makes a lovely, healthy, moist chocolate cake.

Nature's Babe - thanks, I'd forgotten about that one. My husband made a chocolate beetroot cake last year and we were surprised how nice it was, without an overwhelming beetroot taste. And because the beetroot is sweet, you don't have to add as much sugar as you would in a normal cake. As a result, he made some chocolate/beetroot muffins for a Christmas social do we went to. Everybody was intrigued to try them and they all disappeared while most of the ordinary ones were left on the plate. (You can tell who likes to do most of the cooking in our house, can't you? :lol:

lol, I taught my sons as well as my daughter to cook, and they are both excellent cooks now and can make a professional looking birthday cake, and they are no less manly for doing so !
