Quince Vodka

We get lots of enquiries from our customers as to what to do with Quince at this time of year. I say make Quince Vodka! If you are accustomed to making Sloe Gin, then Quince Vodka is prepared in much the same way:
Grate the quince (I find the best way of doing this is using the grater blade that is often supplied with a food processor) and use the same ratio of alcohol/fruit/sugar that you would for Sloe Gin. Like Sloe Gin you need to leave it in Kilner Jars for 6-12 months before bottling. It produces the most beautiful fragrant, golden coloured liquid and goes down a treat at dinner parties.
