Another way of using up those surplus courgettes.
Need: Courgettes, pine nuts, 1 fresh chilli, 1 Lemon, Olive Oil
Slice courgettes lengthwise in thin slices, coat with olive oil and grill or griddle until slightly soft.
Heat a handful of pine nuts in a dry frying pan until lightly brown.
Chop the cooked courgettes into small pieces and put in a dish. Add the pine nuts and 1 chopped chilli. Cut two thin slices of lemon, cut into tiny pieces and mix with other ingredients. Squeeze in a little lemon juice and olive oil.
Nice with fish or on a bed of wholegrain rice.

Thanks Primrose, Just picked rather a lot of courgettes, so trying this today for lunch.
