Calling all recipes for horseradish please..

I have an abundance of horseradish roots or 'thongs' ready to use. Some stored in sand, some frozen. I am seeking recipe ideas for how to use it up. I have in the past been put off by horseradish products in the shops that are mostly sugar and not particularly tasty. I love the strong taste and I am sure there must be some zany ways to attack it!!

Adding a small amount to mashed potatoes is nice.

With Beetroot.
I have a copy of "Seasonal Salads" written by the founders of Liverpool Everyman Bistro (Paddy Byrne and Dave Scott) and they use horseraddish on a variety of salads.

I have checked on the book mentioned and there are receipes for a salad of beetroot and potato with horseradish and one for baby turnips with horseradish.
I ought to have remembered the latter as I tried it and liked it.

Stephen, How is the book saying to use it pls?
Grate it over? Make a relish/sauce? Other?
I am starting with the raw product.

Potatoes boiled in their skins and diced
Beetroot (raw) grated over the potatoes
Horseradish sauce over the top
Salt to taste.

Baby turnips peeled and grated.
Horseradish sauce, whipping cream, lemon juice, salt and pepper.
