Earthing up potatoes

I would like to earth up some drills of potatoes where they are appearing out of the side of the drill.
But is it ok to actually pull the soil over most, if not all of the leaves. I think I better seek your advise before I do so. It seems a bit drastic!.

many people do cover completely, but i prefer to leave a couple of leaves sticking out the top.

We cover them up completely, particularly this early in the year, to protect the foliage from night frosts.

I think that earthing them up completely will protect them from late frosts
