White Sprouting Broccoli

Growing this for the first time this year. I know that they produce relatively small florets, but just how big will/should they get, especially the central one?

It really depends on which variety you have grown.
They are all open pollinated varieties but there are a couple of named varieties that perform nearer to that of PSB. The variety White Star is just coming into harvest here and has a formation very similar to PSB. The normal bog standard varieties are certainly very loose headed. Makes very good eating whichever variety you have grown.

Thanks Johnboy. Plants were 10 of 50 plants bought from Suttons last summer - quite cheaply really. Bought them mainly because my Claret had failed. I potted them on before planting out and this has worked very well. Claret starting to produce good heads, the White are quite small in comparison. Incidentally, I know you love PSB but how do you keep them caterpillar-free during the summer? I can't really use fleece as I have found this encourages ring spot. The plant can survive with plenty of ventilation but not under the fleece.
