Baby Sweet corn

Despite a bad year for many things, my mini sweet corn have done exceptionally well! I have several kilos of baby sweet corn and with the price at around £7 a kilo in the super market I'm keen to preserve them. I intend to freeze - should I blanch them in boiling water first and if so, for how long?

I normally remove the husks or ordinary size sweet corn,, blanch them in boiling water for two minutes and cool them down in cold water until they've lost all their heat. Then pat them dry with kitchen paper, wrap each one in clingfilm to help prevent freezer burn and store in plastic bags. I suspect your baby sweet corn will only need blanching for 1 minute maximum just to kill any bacteria, before drying and freezing.
