My onion sets are bolting what do I do?

Do I pick off the flowers and leave the sets in the ground and hope they develop into onions or should I start using them a bit like wet garlic?

Once they go to seed there is no chance of further development. Eat them. Or cook them and freeze them.

Hi Helixdesign

Take off the flower heads now, but you may as well start and use them as you won't be able to store them. The longer they stay in the ground, the bigger and harder the core of the onion will be.

If the onions have much on them worth eating, you can always chop them up, sweat them down in a pan and then freeze them in bags (I'm sure I've just said this on another post somewhere :?)They're great for use in casseroles, pasta sauce etc.
