2 medium leeks
1 onion
2 and half pints of chicken or veg stock( 2 knorr cubes are fine)
Couple of good handfulls of PSB
4 oz of any crumbly cheese(optional)
pinch of mustard powder
Pinch of chilli flakes(optional)
Sweat ther leeks and onion in butter and a little olive oil, season, add the mustard powder and chilli flakes followed by the stock and simmer for 10 mins. Add the PSB and simmer for a further 10 mins then blitz with a hand blender until completely smooth.
Stir in the cheese if required
