Stuffing for goose?

I thought I'd missed the boat on getting a goose for Christmas but the DH (bless his heart!) managed to source one. :D Hooray!
Only now I'm not sure what to stuff it with. Any ideas anyone? (Non obscene suggestions only please :wink: )

How about a chicken, then a pheasant, then a partrige, then a pigeon and finaly a woodcock.
Well you did say Non obscene suggestions, you never mentioned Non helpful ones. :wink:
You will have to tell your dear DH that you need one or two more things. :D

I use a stuffing that has a base of good sausage meat. Then you add fresh herbs to taste. Seasoning. Onions and fresh breadcrumbs. Anything extra such as chopped cooked chestnuts or pine nuts.

Bacon bits.

Thanks to you too Herby, though as you say, your suggestion is completely impractical. Who do you think I am, Wellie?
I could get hold of all of the above except the woodcock. And no, I don't need your advice on where to get a hold of one of those. :wink:

We were planning to have a goose this Christmas but I couldn't get one so its turkey for us.
I did look into the business of cooking goose though and most suggestions were to cook any stuffing separately. There's a lot of fat in a goose and filling the bird with any sort of sausagemeat stuffing wasn't recommended because you're just adding a lot more fat. Putting either a couple of apples, orange, bay leaf or lemon inside was often suggested. This will give a really good flavour to the gravy.
Stuffings based on apple with breadcrumbs and a little sausagemeat were often mentioned as a good accompaniment.

I agree with John. A stuffing cooked separately is what I'd do, and Delia does this one:
the goose liver, finely chopped
1 Cox's apple, finely chopped
10oz. minced pork or good pork sausagemeat
1 medium onion, finely chopped
20z. breadcrumbs
2 level teasps. dried sage
salt & pepper

Mix it all together.
Delia puts this in the neck cavity and then skewers the flap closed.

I'm SO jealous you're having goose !!

I'm toddling off to bed now with my Teddy Bear.
Watch out OH, I'll be using Piglet's computer instead tomorrow !!

Just got back from Chez Piglets.
Re-booted 'puter, and trying this posting to see if our little Christmas Gremlin has died of boredom and/or starvation in our absence (BC isn't the best conversationalist, or cook, come to that)...

and I really hope the Goose got a right royal stuffing Jenny ?
