Roast parsnips

With the parsnip season well under way has anyone tried roasting them in honey?
Absolutely delicious.

I par-boiled large chunks first.
Placed in a dish and drizzled over runny honey.
Into a hot oven for about 45 mins to an hour.

Even the left-overs cold were delicious.

Mixed root veg were good too.So use up any leftovers.

Hi Beryl

You can also add olive oil dark soy sauce (only about a teaspoonful), rosemary, thyme, salt, pepper, and crushed garlic This is good for most root vegetables cut in equal sizes. With your hands, mix the vegetables, herbs, and spices. Place in a preheated oven at about 200°

Note
using soy sauce makes vegetables look cooked before they actually are. (The dark colouring makes them look as though they are browned) So test before serving.

Maple syrup is also a good alternative for honey on parsnips.
