Unripe squashes

I have picked a few unripe butternut squashes but do not know what to use them for, does anyone have any suggestions ?

Soup ingredient, is about all they'll be good for, make sure there are some flavoursome things in there as well. :D

Try leaving them to ripen in a warm airy place. We were given an unripe (ie green) butternut last autumn and by this spring it was ripe and edible. We have had a good crop of ripe butternut this season due to the good weather, so cannot try to repeat the experience. Though we hope that they will keep well into next spring.

I picked a few green ones some weeks ago and they have ripened in my greenhouse.

How would be able to tell when my butternut squash is ripe and ready to cook?

By its colour, look at one in the supermarket, the nearer to that then the better. :D
