beetroot and red cabbage salad

I found this easy salad combination by accident, as I just happened to have all the ingredients to hand. Raw beetroot, cubed very small; raw red cabbage, sliced thin, about the same amount as the beetroot; home-made raspberry vinegar; bit of black pepper. Spot of olive oil if you want it. Toss. Just before serving, sprinkle with fresh-picked and shelled hazelnuts, or better still cobnuts, grilled or roasted for short time. Wonderful colour, delicious, and it feels very good for you!
