Need to know the best time to plant?

I have some peppers (normal not chilli) that have now matured and are green in my greenhouse, I prefer the flavour when they are red or orange......can I expect them to change colour this late? Or should I pick em now?

I'd be tempted to leave them a while in the hope they will ripen and turn red if we get some nice autumn sunshine. Peppers keep quite well for up to a fortnight in the fridge so even if it turns cooler at night I can't see why they wouldn't be better off still attached to the plants in your greenhouse. I've still got the last few of my peppers ripening off in pots outside on my patio, but I've moved them up against the house wall for a little more protection. The leaves are turning a little yellow now but the green peppers are still slowly turning red.
