What do you all do with your greenhouse soil?

My Grandfather used to replace it every 2 to 3 years with soil gathered from mole hills. Is this a good thing to do?

The soil in my greenhouse is compost I put in 3years ago when we moved in to this house, it's grown everything from potatoes to tomatoes and courgettes. Last year I had really bad mould so let off a sulpher bomb in it during winter. No mould this year thank goodness.

So should I dig all the soil out or just put in some compost from the compost bin?

It is good to replace the soil every few years as pests & diseases gradually build up. If it is old compost you could use it as mulch on a fallow bit of veg plot over the winter. That will let the cold and the birds kill off any nasties for you and anything the worms haven't dragged down, you can dig in come the spring.

If you are going to replace it, it would be a good idea to include some loam (ie decent top soil) and some compost.
