Bread and Butter Pickle

This is one of those recipes that looks inadequate. Don't think that it is. It will surprise you.

3 large cucumbers.
3 tblsps salt.
4 onions - sliced.
1 pint white vinegar.
6 ozs sugar.
1 tsp celery seed.
2 tsp mustard seed.

Place the sliced cuccumbers, salt and sliced onions in a bowl. Stand for an hour. Pour off the brine and rinse well. Drain. Heat the vinegar, sugar, celery and mustard seed. Dissolve the sugar. Boil for 3 minutes.
Pack the vegetables into the jars and seal with the hot vinegar.

Store for 3 months before opening.

Cheese, cold meats, pate, in a sandwich. It's surprisingly good for so few ingredients. I've made 50 jars of the stuff already this year, with at least as many to make in the next month or so, before the plants are ripped out, so look out friends - you will be getting some!

Well I couldn't believe you could make a decent pickle out of bread and butter, so thrilled to find it's cucumbers - can't bear to waste them and they're coming faster than we can scoff them. Thank you tigs :D

I know - I'm on my way to even more than 50 - Christmas Hampers it is then.........Good job it's tasty.
