Can anyone tell me what I can do with a surplus of chillies I will have in a couple of weeks

Have a go at the hot chilli jelly, it's gorgeous and addictive viewtopic.php?t=716

Alternatively you can dry them or freeze them. :D

These are a bit lethal but great with cheese or cold meat if you like hot pickles.

For each jar:

125g Chillies - split but leave a bit of stem on (and deseed if you want to reduce the fire a bit)
125g granulated sugar
375ml white wine vinegar
6 black peppercorns

Pack the chillies in a jar.
Heat the sugar, vinegar and peppercorns to a boil.
Pour over the chillies - they need to be submerged - and seal while hot.
Keeps for a year if stored in the fridge.

I have found a great website called chilliworld.com and it has loads of recipes for hot chilli sauce. There are recipes for mexican fruity sauce,piri piri sauce, thai chilli dipping sauce etc.
Hope this helps with your glut.
