Beetroot Chutney

Hi,
I was asked to post this in the recipies section from cooking tips by Chantal so it doesnt get lost in the threads . Its rather nice and uses up your excess beetroot.

This is a nice recipe for beetroot chutney-very good at Christmas with cold meats.

3lbs beetroot
1.5 lbs of cooking apples
2 large onions
.5 lb of sugar
1 pint vinegar
teaspoon of ground ginger
juice of a lemon

Boil beetroot, skin ,then chop into small cubes when cold. Cut up apple and onions and boil in the vinegar and all the other ingredients for 20 mins. Add the diced beetroot and boil for 15 mins.
Bottle when cold.

Here's another beetroot one, both sweet and slightly spicy. The end result is very sticky and looks like this:

Excuse me for asking this BP, but the quantity of sugar in your recipe is worrying me. I have a batch of beetroot chutney on the go but how much sugar should there be?

Garlic_guy ... your Sweet Beetroot Chutney sounds / looks great!
