As requested by Chantal - Winter squash chutney

1kg squash - peeled and diced
4 tomatoes (can be green) - chopped
4 cooking apples - chopped
2 onions - chopped
2 cloves garlic - finely chopped
125g raisins
310g brown sugar
1 tablespoon salt
1 teaspoon ground cloves
1 tablespoon fresh rosemary - chopped
1 teaspoon ground black pepper
750-875ml cider vinegar

Put everything in a pan and bring to a boil. Start with the lower quantity of vinegar and add more if needed. Cook really slowly for about 1 hour until thick. Put into sterilised jars, cool and then seal.

This is another good one for the inevitable glut - Courgette or patty pan soup with goats cheese and basil.

1 kilo courgettes or patty pans - sliced or diced
2-3 tablespoons olive oil
2 cloves of garlic - fiely chopped
3-4 tablespoon soft goats cheese
750ml hot milk
seasoning
olive oil and basil leaves to serve

Cook the courgette or patty pan in the oil with the garlic really slowly for about 20 mins. Mash with a potato masher or pulse in the food processor - you don't want a smooth puree.
Beat in the goats cheese and add the milk bit by bit, stirring all the time.
Reheat soup, season to taste and serve with a trickle of olive oil and some chopped basil leaves on top.
