my best-ever stuffed marrow yet

A visiting friend, noticing three large marrows in the kitchen remaining from this year's harvest, gave me the following recipe which is very simple but, according to my family, the best one yet. The cooked dish also freezes very well.

1 mugful of grated cheese (or minced meat)
1 mugful of fresh breadcrumbs
1 large onion, finely chopped
1 beaten egg
Generous pinch of dried herbs of choice
Salt and pepper.

Mix all the above ingredients together.
Peel marrow, cut in half lengthways and scoop out the middle bit containing the seeds. Pack the stuffing mixture into one half of the marrow, making it into a "mound" to accommodate the hollowed-out bit of the "lid." Sandwich both halves together and tie with string at both ends.
Smear all over with garlic butter, or vegetable oil and crushed chillies/black pepper. Wrap in tinfoil, place on baking tray and bake in a moderate oven for 45-50 minutes.
Serve sliced in rounds with roast potatoes.
