I have grown round yellow courgettes this year.
About the size of a tennis ball.
Anyone got any new ideas to stuff them with.
Cheese. tom. ham, mushroom, bacon - done all that.

My favourite mix is; courgette flesh, tomatoes, mushroom, onion, garlic; all chopped small and sauteed in butter until almost soft; add a handful of cooked rice, and about 2 tablespoons of pine nuts. Mix one veg. stock cube in minimal boiling water until disolved, mix with a couple of teaspoons of red pesto sauce and add to mix. Season well, add some strong cheese cut into cubes to the mix and stuff your courgettes! ( I bake the empty shells for 10 mins. in the oven first)Top with mozarella cheese and bake for about 25 mins. Yummy!
