CHIICKEN TAGINE

Ingredients.
3lb chicken cut into 12 pieces

2oz butter
3 onions
1 tsp saffron powder
1/2 tsp ground ginger
1 TABLESPOON paprika
4 oz dates
1/2 tsp ground cinnamon
10 oz broard beans(remove outer skins before cooking if prefered)
salt & pepper to taste
fresh coriander and parsley


1.Put chicken into heavy based pan with lid.
2.peel and chop 1 onion into thin rings add these to pan with butter and1/2 pint water,or just enough to cover chicken.
3.Sring pan to boil,reduce heat to low,cover pan,simmer for 30 mins.
4.finley chop 2 other onions,add these and saffron,ginger,paprika,dates ,cinnamon and broard beans.Stir well and simmer for further 30 mine.
45.taste,season with salt and pepper.Roughly chop fresh herbs and sprinkle over,serve with couscous.


I KNOW IT TAKES A GREAT LEAP OF FAITH NOT TO FRY CHICKEN AND ONIONS BUT IT DOES WORK!

I also have a fancy couscous reciept which undoes all timesaving above if anyone is interested.

gonna try this one at the weekend it looks great thanks for posting :D only just joined this site and am working my way through many great ideas
