I like twice baked potatoes. You know, you bake the tattie, scoop out the flesh, add cream or cheese or whatever and bake it again in the oven. It's easy enough but it can be a bit of a faff and it's not quick, ie assuming you're not just microwaving it.

In contrast, gnocchi is very quick - and it's tasty. Sure, you can make gnocchi from scatch but why bother when you can just buy ready made from a supermarket? You simply boil it in a pan of water and then drain it before adding to your sauce.

I put some butter in a frying pan along with a couple of chopped up garlic cloves, a bay leaf and some cream. Then added some smoked haddock offcuts that I'd destined for a pie. A couple of handfuls of baby spinach and there was a delicious meal in just a few minutes.

You don't have to use smoked haddock, of course. Just use whatever you fancy.
