Elderflower cordial is fermenting!

My second batch of elderflower cordial this year is fermenting. I did leave it a day longer to infuse that I maybe I should have. Will it be safe to use? Also, I daren't seal the tops in case they explode!

I can't see it being harmful apart from the explosion risk, after all you can make elderflower champagne. My wife has started our first batch of pink elderflower cordial this morning, will have to see if the hot weather makes that ferment.

This brought back a childhood memory of my Gran making elderberry wine and storing it in cellar then one night hearing popping and finding and a bit of a mess on the floor.
