Orchid help

Now I know this is a fruit and veg forum, but I'm hoping someone also grows fleurs...………….
We've had this Orchid for 2 or 3 years now and it's just started to flower again, my question is however about the "new plant" that is growing on the second flower spike. I believe it can be removed and potted on to make a new plant, now I won't be doing this whilst the plant is flowering, but are there any tricks of the trade that I need to know?
