I know this is a weird question since it's very easy to sow radishes in situ but, for reasons that are too torturous to go into, I want to sow them in plug trays and then transplant them when they're about three inches high. Would this damage the root and stop them forming radishes? Thanks in advance!

Impossibility, you would have no more than 2 weeks between emergence and maturity with the near certainty of them going to seed. However if you get a container, I use polystyrene ex-fish boxes obtainable free, put about 3 inches of compost then sow at 1.5 inch spacing individual seeds, keep watered, no thinning required, you should get a very worthwhile crop.Variety cherry belle or similar although French Breakfast works with a deeper compost.

I think the disturbance would make them go up to seed without forming a root.

I agree with the other two and think that they would go to seed. I grow mine in module trays on the benches outside. They are protected with fleece as the Flea Beetle simple adore them.
You can also eat the foliage if you are of a mind.

Sorry forgot to say that when steamed and then with a little melted butter they are more pallatable.

Johnboy also forgot to say...go steady on the leaves as they can be quite laxative until you get used to them
