Should I cut off my green peppers now ( they are as big as the ones you buy in the super markets ) and put them on a sunny window sill to go red or leave them on the plant to redden?.

Unless you specifically want green peppers for a specific recipe, I would leave them on the plants too. I have never actually grown peppers which stay green as I have grown the bell peppers which are green when unripe but turn slowly red or yellow when they ripen. I sometimes see packets of red, orange and green ell peppers in supermarkets or on market stalls and wonder why anybody wants the green peppers as surely they are effectively unripe peppers and not so sweet as the red, yellow or orange varieties?
Once you cut them from the plant the skins will start drying out and wrinkling.

Pluck only for instant use or green peepers recipes otherwise leave to get them turn into red for further use.
