Asparaus

What are you all doing this year with a glut of asparagus.
No more quiche or soup please. I need some new ideas.

Asparagus glut? Oh I wish!!

My husband is a huge asparagus fan and we are spending a fortune buying it from our local specialist farm. It is delicious though and such a short season, so it's our annual veggie indulgence , It's one of those vegetables I think that doesn't really lend itself to poncy recipes as the flavour and texture is too subtle. You could always try an asparagus and mushroom risotto though if you have some homemade chicken stock.

I think we forget how lucky those of us are that grow it Primrose. Must be all the winter rain and mild temperatures this year I think but I certainly have far more than normal.
Thank you for the suggestion of the risotto, I do have some stock left in the freezer, something I like to keep made up in small quantities. Will give it twirl.

Asparagus, pea and leek risotto is good too. You can also add mushrooms or a mixture of fish or shell fish. Finished off with marscaponi rather than butter or cream. Definitely no parmesan if you add fish. As you would expect - al la James Martin.
