Pickled Gherkins

Hi everyone,

Have any of you ever pickled gherkins before :shock: :lol: and do you have any tips on what to do or not to do :?

If you look on youtube you can get some good recipes and see good videos on how to do pickled gherkins. I tried a few years ago but they didn't turn out so good. :( not tried again since. but next year I am going to have another go if I get enough cucumbers to do it. :D

I've not pickled gherkins but have pickled a couple of jars of cucamelons (Melothria scabra) as in James Wong's book "Homegrown Revolution"

I have just opened a jar to try them and they are lovely.
The recipe for these is:

375ml white wine vinegar
1 tsp salt
4 tblsp caster sugar
1 tbsp chopped dill
1 tbsp chopped mint
1 tsp coriander seeds
250 g cucamelons

Pour vinegar in a bowl and whisk in salt and sugar until dissolved.
Add mint, dill and coriander seeds.
Wash cucamelons and put in sterilized jar
Pour over seasoned vinegar and seal tightly

It says they will be ready in two weeks but I've left mine for four.

They are still a bit crispy and taste lovely.

I would think the same would apply to gherkins.
It might take a bit longer if they are a bit larger.
