Lightly spiced beetroot and carrot salad
Recipe to follow if anyone wants it

It's quite an adaptable recipe. Carrot and beetroot are, of course, essential, otherwise you can experiment with different flavours.
Two small beetroot and two medium carrots, both peeled and roughly grated
A tablespoonful of plump raisins soaked for 30 mins in hot water, then drained
Any of the following (but probably not all), lightly toasted in a dry pan and allowed to cool
Flaked almonds (tablespoonful)
Pine nuts (tablespoonful)
Sesame seeds (teaspoonful)
Cumin seeds (teaspoonful)
Sunflower seeds (tablespoonful)
A heaped teaspoonful of ground cumin or ground coriander
A dash of chili sauce
A good lot of extra virgin olive oil
Half a tablespoonful of red wine/cider vinegar
Juice of half a lemon
Mix all together in a bowl topped with chopped coriander, mint or parsley and serve
