runner beans

was sorting through some seeds , ive got far more home saved runner bean seed than i need.... are these dry beans edible?
if they are wots the best way to cook them?

Hi Richard P,

This article says yes if they are cooked, they should never be eaten raw in there dried state as they contain toxins that are only broken down by cooking.

This topic has come up before.

Soak the dried beans over night, pour away the soaking water and put them in fresh water. Boil them rapidly for at least ten minutes and then all the toxins will have been destroyed and they taste lovely in stews, chilli con carne type things with a nice tomato sauce etc. I've also used them with a mixture of other things to make veggie burgers.

I suppose if you use the fresh shelled beans you just need to boil them well without the soaking but I haven't tried them like that.
