Good evening people
I have a good crop of beetroot in the garden and fancy pickling some. Looking at the recipes there seems to be a lot of different opinion on the types of vinegar to use. I.e Malt and Pickling Vinegar. I would welcome any tips/suggestions from anyone who has tried these.

Why not try a jar of each? But whatever you do, keep the beets out of any light or they go a disgusting brown colour.

I'd suggest using the white vinegar if you can find some. The beetroot will of course soon turn the vinegar red but once you've used it, it you want to be really parsimonious you can then reuse it for pickling small amounts of red cabbage, if that's another pickle that you like.
