easy sweet cucumber pickle

Makes aprox 6 jars.

2 Medium Onions
2 Large Cucumbers
12 fl oz Cider Vinegar
12 oz sugar
1 tsp ground turmeric
1 tblsp Mustard Seed
2 tsp celery or dill seed ( i left out as didn't have any)
2oz course sea salt

Peel & finely slice onions, thinly slice & quarter cucumber, place in bowl with salt & leave for 24hrs. Rinse in water and drain well.

Put vinegar & Spices in a pan with sugar & stir to disolve sugar, add cucumber & onion. Bring to simmer & cook for 2 mins, scoop out veg into jars.

Return syrup to heat, boil for 5 mins then pour into jars to cover vegetables.

Easy peasy & quick too!

It's also known as bread and butter pickle (don't know why) and it keeps really well.

Evening Dirt-digger, there is a little cunning in my plan, as my Mum is bound to give me a jar when she has made a batch, so i will be able to have it with cheese or hamburgers too. :)

cunning plan there oldherbaceous love your thinking but you should try to make it your self it easy to do

We made a jar of this last weekend, pretty much the same as the recipe in the first post. Some recipes say eat within a few weeks, others say best after three months. We have tried it after a week and it's delicious - crisp onion and cucumber. What are the onions and cucumber like after three months? Any experiences welcome.
