Dividing potatoes into First Earlies, Second Earlies and Maincrop is a bit misleading and is simply a reflection of the length of growing needed for each type, as Mike says.
You can, of course, plant them all at the same time, and they will be ready at the intervals Mike suggests. So you can eat over a long period.
I shall be growing less potatoes than I have for many years, and I'll be aiming to get them all in at roughly the same time (largely to avoid early blight on the maincrops which reduced my yield last year).
