We have known about these for years, but never tried them till last week. They are very good :!:

Gorwydd Caerphilly Glamorgan Sausages
2½ oz brown & white breadcrumbs + extra white for coating
½ small leek very finely chopped
2 oz Caerphilly cheese grated
1 tbsp parsley finely chopped
1 tsp oregano finely chopped
Pinch dry mustard
2 eggs
Flour for coating
Oil for deep frying

1. Mix together the crumbs, leek, cheese, parsley, oregano and mustard. Season well. Beat one egg + one yolk and mix into breadcrumb mixture.

2. Divide into 4, roll into sausage shapes and toss in flour. Brush with the beaten egg white then coat with breadcrumbs. Chill in fridge.

3. Fry gently until crisp and golden on all sides. Drain on kitchen paper.
