Great Zucchini Recipe

Easy prep, good for company. It would also work for yellow summer squash.

The dinner below is BBQ chicken, vinaigrette coleslaw, and zucchini crisps.

Zucchini Crisps
For 2-4, 20 minutes prep, 25 minutes cooking.

— 1 medium-large zucchini or summer squash
— olive oil and/or cooking spray
— 1/4 cup parmesan cheese, grated fine
— 1/4 cup Panko bread crumbs
— fresh ground pepper (and salt if desired)
— chopped fresh parsley

Oil a baking sheet. Preheat oven to 450°. Slice zucchini 1/4", toss in a bowl with oil.

Combine parmesan and bread crumbs in a bowl and add several turns of black pepper.

Press the zucchini slices into the crumbs and cheese mix, and spoon some over the top of each slice. Arrange on the baking sheet.

Cook for 10-14 minutes, until there is slight browning. Reduce the heat to 350°. When the tops are brown, serve, with a garnish of parsley.

Primrose - they are kind of a no fail crop. Mine were delayed a bit but when they came i was overwhelmed. I spend too much time on recipe sites finding ideas to use, but it remains the one crop that has to be left on door steps or taken to work to give away! x

Oh, I have to try this recipe! I love zucchinis, they are very tasty but often I do the same things with them. The best ones are filled with meat, my whole family loves them! Slices of zucchini sounds great!
